Calling All Chefs!

Chef Gordon Rader, CEC, invites all ACF of Southeast Iowa chefs to help Indian Hills Community College re-evaluate its Culinary Arts Program.  The next meeting will be held Monday, June 7, at 3:00 pm at Indian Hills Community College.  Says Rader, “We’re spending the next year revamping our curriculum, and there’s no better guide for the process than our advisory board members.”  Please contact grader@indianhills.edu to reserve your seat at the meeting.

What’s Happening?

Here is what’s going on in the ACF of Southeast Iowa as of June 1, 2010…

At our last gathering on May 11, it was proposed that monthly meetings be held on the second Tuesday of each month.  We discussed holding our next meeting on Tuesday, June 8, at Smokey Row Coffee House in Oskaloosa (a notice will be forthcoming from Chef Turley).

Subsequent proposals for meetings are as follows:

YouTube Contest at Indian Hills Community College

Calling all Indian Hills students! In a two-minute video, show us why you love Indian Hills, and you could win $1,000!

Prizes
Cash Prizes Include:
1st Place: $1,000
2nd Place: $750
3rd Place: $250

The winning video will also be featured on the Indian Hills website and the Indian Hills YouTube Channel!

Submission Deadline
July 1, 2010 at 11:59 p.m. (Central Time)

Details and Requirements
Topic: Tell us why you love Indian Hills Community College.
Length: Video must be no more than 2 minutes in length.
File Size: Video must be no larger than 2 GB.
Format: Video must be a single, stand-alone file in one of the following file formats:
WMV (Windows Media Video), AVI (Windows), or FLV (Adobe Flash Video)
Note: WMV format is preferred.

Judging
Entries will be judged as follows:
Phase 1: A panel of judges consisting of Indian Hills employees will evaluate the entries and select a group of finalists based on the following criteria:

The most apt, creative, original, and interesting video;
Degree of impact concerning love for Indian Hills; and
Clarity of message concerning love for Indian Hills.

Phase 2: The finalists’ videos will then be made available to students and employees of Indian Hills Community College via MyHills, so that they may vote for their favorite, according to the same criteria (see above).

Items to Note
Eligibility: Only current, registered students of Indian Hills Community College are eligible to participate. No employees (with the exception of those who are also IHCC students) or their families are eligible to compete. This means the student must be registered as either full or part-time at some point between August 26, 2009 – July 1, 2010.

Copyrighted Material: You may not use any copyrighted material in your video (example: music, trademarks, movie clips, etc. that are owned by someone else).

Rights: By submitting your video, you are granting full ownership rights to Indian Hills Community College, including using, publishing, and editing the video as it deems appropriate, without further permission or compensation to you, regardless of whether your video wins the contest.

Submissions: Limit of three submissions per student.

Winners: Only the student under whose account the video is actually submitted will be considered the winner. (See “How to Enter” below for details.) In other words, if two or more students work together on a video, only the one who submits it can win. It will be up to the winner to determine how he/she will use or distribute the prize money.

Requirements: Entries that do not meet the requirements described above (example: acceptable formats, maximum length, maximum file size) or are not submitted in the means described in the instructions (see “How to Enter” below) will be disqualified.

Equipment: Students are expected to acquire on their own the equipment necessary to create their videos (e.g., video camera, video editing software, etc.).

Tips
The following tips are provided to help you produce the best possible video entry and to spark your creativity.
Answer the Question: The contest is called
“Why I Love Indian Hills.” So make sure your video tells us clearly what you love about the college.

Stand Out: Be creative and unique. Try to make your video stand out from the crowd in a good way!

Show Don’t Just Tell: Talking heads are boring. Don’t just record yourself talking about Indian Hills. SHOW us what you love about the college. (There’s a reason we chose to hold the contest during the spring and summer seasons.)

Keep Your Audience in Mind: Remember that these videos will be used to show potential future students what Indian Hills is all about from a student perspective. After watching your video, they should know why they should choose Indian Hills.

Variety: Rather than focusing on just one thing, consider showcasing multiple things about Indian Hills that you love.

Wide Appeal: Try to include things that are available to all students, rather than focusing too narrowly on just one academic program, for example.

Be Specific: Give us details about the things you love. Avoid being too general. “Indian Hills is great!” doesn’t paint much of a picture for people who aren’t familiar with it.

Only Two Minutes? Two minutes. 120 seconds. Either way you slice it, it’s a lot of time. Keep in mind that most of the commercials you see are only 30 seconds. You don’t have to use it all. Maybe you only need one minute to do the job. Your video can be shorter. Just be sure you don’t go over the limit.

Recruit Your Friends to Help: Just be sure to work out the details ahead of time.

How to Enter
All entries must be made through MyHills. Remember, only current IHCC students are eligible.
1.Log into MyHills with your student username and password.
2.Click the “YouTube Video Contest” link in the “General Links” area on your MyHills homepage.
3.Read the instructions in the Announcement.
4.Click the “Submit Your Video” tab at the top.
5.Carefully read the “Official Contest Rules.”
6.Complete and submit the “Online Entry Form” (be sure to include all the information).
7.Click “Upload Your Video” and follow the instructions (be sure the file meets the requirements).

Official Contest Rules
The Official Contest Rules are available in the “YouTube Video Contest” area in MyHills. Be sure that you read these carefully before beginning work on your project, as they describe the requirements in greater detail.

Winners
The winners will be announced on the Indian Hills website on or around September 15, 2010.

ACF Central Regional Conference

The 2010 ACF Central Regional Conference, hosted by ACF Greater Indianapolis Chapter, took place in the auto-racing capital of the world, Indianapolis, March 26-28. Terms known widely by locals and race fans alike took on a new meaning during the conference, such as an apron no longer meant a paved portion of a racetrack separating the racing surface from the infield.

From start to finish, the conference was nonstop for the more than 400 attendees. Central Region Vice President David Russell, CEC, AAC, offered his usual combination of humor and ACF business during season 5 of “Cooking Today” at General Session, and motivational speaker Charles Marshall wove the Taste Success conference theme into his inspirational message, “Shattering the Glass Slipper.” Guest chef Duke LoCicero of Café Giovanni in New Orleans’ historic French Quarter shared his insight on the recovery of the Big Easy, where the 2011 Central Regional Conference will be held.

March Subchapter Meeting Revised

IHCC – ACF of Southeastern Iowa Culinary Arts Scholarship Dinner

The Fourth Annual IHCC/ACF of Southeastern Iowa Scholarship Dinner to benefit our top culinary students was held last Friday night and it was spectacular!  Great chefs from our chapter and deserving students worked side by side to produce an incredible evening of entertainment for our supporters!  Thanks to all of those who participated especially to Chefs Scott Turley, Laura Kaiser, David Jensen, Jared Heilman, Mark Fisher, Benjamin Whitmore and Mary Kivlahan!

Tickets on Sale for Fourth Annual IHCC Culinary Arts Scholarship Dinner

Persons who would like to experience a multi-course gourmet dinner to benefit students in Indian Hills Community College’s culinary arts program can purchase tickets beginning Monday January, 11 at 8 am.  The American Culinary Federation of Southeast Iowa is partnering with the IHCC culinary arts program for the fourth annual dinner at the Bridge View Center in Ottumwa on Friday, January 29.

The evening will begin at 6 p.m. with assorted hot and cold hors d‘oeuvres by IHCC culinary staff Mary Kivlahan and Mark Fisher.  After the guests have been seated at their tables at 6:30, wild mushroom bisque by Chef Benjamin Whitmore, CEC from Bridge View Center in Ottumwa, will follow.  The main entrée of roasted beef tenderloin sauce marchand du vin served with pommes Dauphine and bacon wrapped haricot verts will be served by Chef Scott Turley from Grinnell College in Grinnell Iowa.  The other courses will be prepared by a host of local American Culinary Federation chefs and are sure to bring a great balance to the main course.  Tony Gross from Johnson Brothers /Iowa Wine and Beverage will be on hand to discuss the wine offerings and help pour as well!  Special thanks to Sysco Food Services of Iowa and Hawkeye Foodservice Distribution for donating product to this event.

Tickets are $50.00 and go on sale Monday January 11 and are available by contacting the Indian Hills Culinary Arts program at (641) 683-5197.  Persons can also send an email to grader@indianhills.edu .  Tables of 10 are available.  

Several outstanding Indian Hills culinary students will be awarded scholarships during the evening event.
