What’s Happening?
IHCC Culinary Arts is presently working on an articulation agreement with Iowa State University’s Food Science and Nutrition Program. The four-year program at ISU is a cross-disciplinary degree combining a strong food science foundation with culinary skills development. We’re another step closer to the agreement after last week’s meeting, and the cooperation and flexibility of the program’s faculty have been tremendous.
We’re also planning to collaborate with ISU on a trip to Spain in the spring of 2011! La Fundación de la Lengua Española graciously hosted our last event in November, 2009, and we’re looking for more participants. Details will be available soon, including pricing.

Calling all Chefs…to help IHCC re-evaluate its Culinary Arts Program. The next meeting will be held Monday, June 7, at 3:00 pm at Indian Hills Community College. Says Chef Gordon Rader, “We’re spending the next year revamping our curriculum, and there’s no better guide for the process than our advisory board members.” Please contact grader@indianhills.edu to reserve your seat at the meeting.
Obama’s Visit, Counselor’s Day and ISU Articulation
What a great week for IHCC! Our culinary students cooked for members of President Obama’s security and set-up team on Monday afternoon while school faculty and staff prepared for the President’s arrival on Tuesday. More than 2200 folks turned out for the event and I can’t say enough about the positive impact the visit made on our community and college! Thanks to all of you who helped to make this event successful!
Yesterday was yet another historic one for our school, specifically for our program. We’ve been talking with ISU’s Food Service and Nutrition Program faculty for more than a year regarding possible articulation between the two schools. Yesterday marked another move forward towards an agreement! For those students interested in a 4 year degree with emphasis on the science side of cooking as well as R&D, this agreement will definitely benefit you. ISU’s program is phenomenal and this agreement is a plus for all involved!
Conselor’s Day is a yearly event with more than 100 local counselors on board for lunch and an opportunity to display our culinary talent! Excellent food and service for both events and I appreciate all of your hard work this week! My students are truly “stakeholders” in our future development and play an important role in our continued success!
Enjoy a few of the images taken during this week’s events!

Big congrats go out to David Van Riet as he took second place, the silver medal and $300.00 in yesterday’s First Annual Riverside Casino Culinary Classic!
I’m really proud of all of our students that participated in this event. The learning experience was formidable and the competition fierce. Brandi Sokol, Anthony Nace and Suresh Miller all from IHCC entered the event as well and Ernie Vega along with the help of Andreanna Schooley who both worked prep, back up and cameras during the grueling 10 hour event. Of course there was quite a lot more work to this event in preparation and planning so “hat’s off” to the group and we certainly want to thank the generous and helpful Riverside Casino staff for making our stay a comfortable one! Can’t wait for next year!

Another group of talented culinary students working their way through the program! It’s always a blast to be a part of their development and note the positive changes that take place through their educational exploration. We’re headed out Sunday for the Riverside Casino Culinary Classic Competition and hope some of you will be able to attend from 6 to 8 pm to support our students as well as enjoy the amazing food they’ll produce that day. Check back next week for the results with lots of images from the event. Good luck team!
Meanwhile a few images from current events!

Items to Note
Eligibility: Only current, registered students of Indian Hills Community College are eligible to participate. No employees (with the exception of those who are also IHCC students) or their families are eligible to compete. This means the student must be registered as either full or part-time at some point between August 26, 2009 – July 1, 2010.

Equipment: Students are expected to acquire on their own the equipment necessary to create their videos (e.g., video camera, video editing software, etc.).
Tips
The following tips are provided to help you produce the best possible video entry and to spark your creativity.
Answer the Question: The contest is called
“Why I Love Indian Hills.” So make sure your video tells us clearly what you love about the college.
Stand Out: Be creative and unique. Try to make your video stand out from the crowd in a good way!
Show Don’t Just Tell: Talking heads are boring. Don’t just record yourself talking about Indian Hills. SHOW us what you love about the college. (There’s a reason we chose to hold the contest during the spring and summer seasons.)
Keep Your Audience in Mind: Remember that these videos will be used to show potential future students what Indian Hills is all about from a student perspective. After watching your video, they should know why they should choose Indian Hills.
Variety: Rather than focusing on just one thing, consider showcasing multiple things about Indian Hills that you love.
Wide Appeal: Try to include things that are available to all students, rather than focusing too narrowly on just one academic program, for example.
Be Specific: Give us details about the things you love. Avoid being too general. “Indian Hills is great!” doesn’t paint much of a picture for people who aren’t familiar with it.
Only Two Minutes? Two minutes. 120 seconds. Either way you slice it, it’s a lot of time. Keep in mind that most of the commercials you see are only 30 seconds. You don’t have to use it all. Maybe you only need one minute to do the job. Your video can be shorter. Just be sure you don’t go over the limit.
Recruit Your Friends to Help: Just be sure to work out the details ahead of time.
Have Fun!

Studio Lunches in Full Swing!
Great new set of students cooking up some fine “eats” in our studio every Wednesday and Thursday during Cooking Principles! The first few weeks “under their belts” and the product and performance of these future chefs is inspiring. Here’s a few images from recent sessions and after you’ve finished up admiring my student’s work, take a look at our new forum for more images, games, networking and culinary information at http://hillskitchen.org

Lots of upcoming events and a group of very talented students to pull them off! I’m really excited to have such a dynamic and enthusiastic group of students this term. I’m always pleased with each group by the time they get to the advanced classes but this group brings quite an array of talents to the classroom!
Our first Board Dinner was scheduled at the same time as Tony Gross’s Food and Wine event last week and the guys pulled off the to separate venues very professionally. The following images capture some of the great product as well as some of our new students!
I’d also like to ask you to stop by our new forum site for students and help us add to the rich content already posted! We like the interaction that VBulletin offers and since we’re working with many local high schools as well, we thought this would be a great way to promote interaction between students and industry professionals. Also, if you have an upcoming event this is a great place to let everyone know about it. Our ACF Subchapter as well as the original ACF of Iowa Chapter in Des Moines bring more then 100 professionals and students together to promote education and I hope you’ll be willing to help us to continue the growth we’ve seen over the last few years!

Finals week and a new group of students come into the program next week. I’ll have the next group for Principles of Cooking so it’s time to start from scratch! Looking forward to the challenges this term always brings and the new “top dogs” that develop!
To my group that’s headed out on their internships, it was a pleasure working with all of you and I’m looking forward to our final six weeks together. I hope you’re thinking about the challenges to come and the great opportunities that await you!
I’ve been remiss in posting as we’ve been really busy but we have collected a nice set of new images to share. These are from a recent dinner event for Executive Council. We hope you enjoy them.
